Paleo Kale Chips

A little added salt and crunch completes a bowl of comforting soup! There’s plenty of Paleo-friendly croutons out there, but we thought we’d switch it up with these Paleo kale chips to add some extra vegetable power to our chicken vegetable bone broth soup. All you need is five ingredients and you’re on your way to a completely Paleo-friendly bowl of soup with kale chips!

Paleo Kale Chips

For ingredients, you’ll just need a head of kale, some avocado oil, salt and pepper (and any other seasonings you want), and red chili flakes and green onion for garnish. Let’s get into the cooking!

To start, preheat your oven to 350 degrees F. Wash your kale and make sure it’s patted mostly dry before you start. Tear the head of kale into smaller pieces and throw them into a big bowl. Measure about 1 tablespoon of avocado oil and pour over the ripped kale pieces. Toss until the pieces are all evenly coated

Get a baking sheet and line with parchment paper or tin foil. Spread each piece of kale out so you just have one layer on the sheet. Sprinkle salt and pepper over the oil-tossed kale pieces. At this point, feel free to add any other seasonings you want (cayenne for spice, etc) as well. Have fun with it! Put them in the oven and bake for about 12 minutes, or until crispy.

Paleo Kale Chips

While your kale chips are crisping up in the oven, it’s time to make your soup. Our soups aren’t the average canned soup you grew up with. Our bone broth soup cups are low-carb, packed with protein, and made with collagen and MCT oil. Plus it helps that they’re delicious! For this recipe we went with our Paleo AND Keto-friendly chicken vegetable bone broth soup.

To make the soup, empty the dried powder from the packet into the cup. Pour your MCT oil packet on top. Boil water and pour it into the cup all the way up to the fill line. Stir it up! We like to use a whisk to get all the deliciousness mixed in, but a spoon or fork works just fine. Cover it with tin foil or a plate for about 3 minutes. Remove the cover, stir again, and enjoy!

Keto and Paleo Chicken Vegetable Bone Broth Soup

You can keep the soup in your cup if you’re heading out for your day, or transfer it to a bowl to easily pile on your kale chips. We also chopped up a stalk of green onion for some extra veg, and added a pinch of chili flakes for a little kick.
