Paleo Bacon Zucchini Tots
Tater tots are a God-tier food, but just because you're following a paleo or keto diet doesn't mean you can't have tasty tots.
Our version uses zucchini and bacon, served with Power Provisions chicken vegetable bone broth soup. With 20g of protein and 5.5g of net carbs, our chicken vegetable bone broth is a low carb way to meet your wellness goals.
Start by grating half a zucchini into a bowl and squeezing out the liquid with a paper towel. Cook bacon until crispy, whichever way you like to cook your bacon – we cooked ours the old-fashioned way in a pan.
Chop the bacon into small pieces and mix into the zucchini with potato starch, paprika, garlic salt, and onion powder. At this point, it should be a dough-like consistency.
Roll the dough into tots and fry in oil until nice and crispy on the outside. Serve with bone broth soup, garnishing with parsley and red chili flakes.
