Slice a thick carrot into chips, then set aside and start on the batter. Put beaten egg and almond flour in separate bowls, then coat each carrot chip with egg and flour. Lightly cover with salt, pepper, and paprika.
Heat coconut oil in a pan and cook carrot chips until golden brown. We served ours with Power Provisions Chicken Vegetable Bone Broth Soup and a sprig of cilantro.
